Teresas Chocolate Fudge Crumble

Teresa and I made this lots & lots in the Papanui Street flat in Tokoroa  around 1980 or 81.  Doubling the mix became a standard option as Dad Phipps always seemed to appear from no-where just as it was ready to come out of the oven.  This is rich, sweet, buttery and sticky, Oh so divine.   Now that I am a bit more health conscious this one is reserved for special occasions.

Teresa's Chocolate Fudge Crumble
  • 100 grams butter
  • 1 Cup flour
  • 1 Tablespoon cocoa
  • 1/2 Cup sugar
  • 1 teaspoon baking powder
  • 1 t vanilla
  1. Cream the butter and the sugar.
  2. Add the dry ingredients and the vanilla.
  3. Press ½ of the mixture into a sponge roll tin.
  4. Melt:
  • ½ tin of condensed milk
  • 50 grams butter
  • 2 Tablespoon of golden syrup
  1. Pour over base and sprinkle remaining ½ of mix on top.
  2. Bake on 350 for 15-20 minutes.
