Chocolate Fudge Self-Saucing Pudding

My brother Chris would regularly come for dinner when the children were young and liked this for pudding. It became a memorable desert when it was cooked for his birthday, served dusted with lots of icing sugar and adorned with a candle.   Brother Chris took a large breath and blew the candle out as well as blowing icing sugar all over the children. The was plenty of laughter as the pudding was enjoyed.

Select a large  (10-12 Cup) microwave safe Bowl and mix

Make sure the bowl is big enough....
  • 2 ½ cups flour
  • 2½ teaspoons baking powder
  • 1 cup sugar
  • ¼ cup cocoa
  • 1 teaspoon coffee
  • 125 grams melted butter
  • 1½ cups milk

Scrape down sides so it is tidy

Mix together in a jug

  • 1 cup brown sugar
  • 2 Tablespoons cocoa
  • 3 cups hot water

Pour over pudding – DON’T STIR

Microwave on High for 15 – 20 mins

  • This is a big pudding and serves about 10 people
  • This is my favorite version of this pudding as there is only one dirty bowl and it cooks quickly in the microwave.
  • You can leave out the coffee and use Orange juice instead of water for a Jaffa Pudding
