Highlander Mayonnaise

There are many recipes I have that use sweetened condensed milk but most of them are deserts or baking.  This Mayonnaise recipe was printed on the label of the can – often the inside of the label.  There is also a less luxurious version but this is the one I prefer.  These are the original quantities with the metric equivalents included for your convenience.

  • 1/2 tin Highlander Condensed Milk
  • 1/4 pint (150mls) salad oil or melted butter
  • 1/4 pint (150 mls) vinegar or lemon juice
  • 2 egg yolks
  • 1/2 teaspoon salt
  • 1 teaspoon dry mustard dash &/or cayenne pepper

Place all ingredients in a bowl and beat well until the mixture thickens. That’s all! And it makes a delicious salad mayonnaise that can be stored in a cool place for a very long time.
