Alisha’s Double Chocolate Fudge Muffins

OK, These have to be the most decadent chocolate muffin.  Rich chocolate muffin surrounding a chocolate fudge centre.  Eating these too fast has been known to bring on choking fits…so pace yourself and enjoy.

  • 125 grams dark chocolate (Energy is best)
  • 1/4 cup cream
  • 2 1/2 cups flour
  • 1/2 cup cocoa
  • 1 cup sugar
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 Eggs
  • 3/4 cup plain yogurt
  • 1 1/4 cup milk
  • 100 grams Butter (melted)
  • Icing Sugar
  1. Break chocolate into pieces and place in a microwave jug with the first measure of Cream
  2. Microwave 1 minute on high and stir until smooth
  3. Put in fridge to cool until firm enough to roll into 12 balls
  4. Sift flour, cocoa, baking powder, baking soda and salt into a large bowl.
  5. In a jug mix eggs, yogurt, milk and melted butter. Stir gently into dry ingredients.
  6. Half full 12 greased muffin tins with mix.
  7. Place a chocolate ball in each and top with remaining mix.
  8. Bake at 220  C for 15 – 18 minutes.
  9. Cool in the tin for 5 minutes and dust with icing sugar to serve.

HINT – Best served warm…. you may decide to double this mix!!!
