I have had this recipe since the children were small. Norma used to make this all the time for cake stalls etc. Our children went to kindergarten and primary school together in Rotorua. This cake doubles and triples well and is good for making novelty or shaped cakes. Oh, and did I mention…its really easy to make all in one pot!!
- 60 grams Butter
- 1/2 Cup Sugar
- 1 desert-spoon Golden Syrup
- 1 Egg
- 3/4 Cup Milk
- 2 Tablespoons Cocoa
- 1 Cup Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
In a big enough pot melt the Butter, sugar and golden syryp.
Remove from the heat and beat in the egg – quickly so it doesn’t scramble.
Add flour, cocoa, baking soda and baking powder and mix till smooth.
gradually add the milk and stir well – this is a runny mix – dont panic.
Bake in a greased tin at 180°C for 25 minutes or Microwave on high for 5 minutes.
