Family Curry

Im not sure which country would lay claim to this as an Authentic curry recipe but it is the style of curry that we had growing up. Generally made with sausages or gravy beef back then it is now popular with chicken as well.  Great for kids or people who don’t like a hot curry. had this for dinner tonight with the NZ contingent (Chris, Tris, Eddie & Alex)….nom nom nom …with a lovely little Huia Gewürztraminer supplied by Dianne.

  • 8 thin sausages (or 1kg Chicken, Lamb or beef)
  • ¼ cup sultanas
  • 1 apple, cored and diced
  • 1 onion, diced
  • 1 tablespoon mild curry powder
  • 2 tablespoons flour
  • 1 tablespoon coconut (or 100ml Coconut milk)
  • 1 tablespoon tomato sauce
  • 1 tablespoon chutney
  • 1 tablespoon  jam – any flavour
  • 400mL chicken (or beef) stock
  1. Cut meat into bite sized pieces.
  2. Put in crock-pot with Onion, apple and Sultanas.
  3. Mix all remaining ingredients together and pour over sausages.
  4. Cook on High –  4 hours for sausages, 8 hours for Chicken or Beef
This can be cooked in a pot on the stove, pressure cooker or in a casserole dish in the oven. I like the long slow crock-pot cook for the flavours to combine well.
16 May 2015 – Cooked this recipe as a Chicken Curry for our Capri Driving friends.  I added some assorted frozen vegetables to the mix and about 1/2 Cup pf semi crushed Cashew nuts – very popular dish as part of a substantial meal.
