Sally Lunn

What should we do with the leftover mashed potato?  Make this yummy sweet alternative to scones or damper.  This is another of the recipes from my “other family” from Tokoroa NZ and was specifically requested for inclusion by my brother Chris.

Sally Lunn Dough
  • ¾ Cup Sugar
  • 1 Cup Mashed Potato
  • 2 Cup flour
  • 2 teaspoons Baking Powder
  • ¼ teaspoon Salt
  • ½ Cup Sultanas (optional)
  • ¼ Cup Milk
  1. Cream Potato and Sugar
  2. Add dry ingredients
  3. Add milk and mix to make a soft dough
  4. Shape on a greased tray – round and about 2 cm flat
  5. Bake 20 – 30 minutes at 180ºC
  6. Cool then ice with-
  • 1 Tablespoon Butter
  • ¾ Cup Icing Sugar
  • 1 ½ Tablespoons Water
  • 2 Tablespoons Coconut
