Honey Curry Chicken

Today is Friday the 13th ….. and Im not scared!!!!

My only problem is I cant decide what to cook for dinner.  I have some chicken thighs defrosting.   Perhaps I could resurrect an old favourite from when the children were little…. Honey, Curry Chicken.

This is so simple….

  • Chicken – drums, wings, thighs etc enough to feed your tribe
  • Butter – 2 Tablespoons
  • Honey – 4 tablespoons (NZ Manuaka honey is good for this)
  • Curry Powder – 1 teaspoon
  • English Mustard (not powder) – 1 teaspoon
  1. Melt the butter, honey and Curry powder gently
  2. Pour over the chicken
  3. Bake in the oven – turning chicken 3 or 4 times as it cooks
  4. When chicken is cooked place under the grill to crisp and boil liquid to make a sticky sauce
  5. This is nice with a crisp salad and a baked potato

Later the same day…. made it, ate it, forgot to get a photo.   Ah well, there will be a next time….and there was….

Alternate cooking instructions-

  1. Melt the butter, honey and Curry powder gently
  2. Pour over the chicken and Marinate for 2-3 hours
  3. Drain and reserve marinade
  4. BBQ chicken until thoroughly cooked (low and slow works better that a flare up)
  5. Boil marinade to make a sticky sauce
