Jersey Caramel Cheesecake

I have a few favourite lollies – Glo Hearts, Milk Bottles, Turkish Delight and Jersey Caramels so any recipe that uses these as an ingredient or has a similar flavour is sure to please me.  This cheesecake appears to be a bit tricky but is actually quick, easy and not too expensive to make.

Base

  • 250 grams Sweet Biscuit crumbs (8 ounces)
  • 125 grams Butter melted (4 Ounces)
  1. Combine Crumbs and Butter
  2. Press into the base and sides of a 20cm pie dish or springform tin
  3. Refrigerate while preparing the filling

Filling

  • 350 grams Jersey Caramels (12 Ounces)
  • ¼ Cup of Milk
  • 250 grams Cream Cheese (8 ounces)
  • 3 teaspoons Gelatine
  • 1 Tablespoon Water
  • 300 mls Thickened Cream (1/2 pint)
  1. Melt Jersey Caramels and Milk in a pan over a meduim heat until melted. Cool slightly
  2. Beat Cream Cheese in a bowl until smooth then combine with the Caramel mix.
  3. Sprinkle gelatine on water then heat in microwave for 20 seconds to dissolve
  4. Add Gelatine to Caramel and Cream cheese. Mix well.
  5. Whip cream until soft peaks form then fold into caramel mix.
  6. Pour into base and return to refrigerator to set.

Topping

  • 150 grams Jersey Caramels (5 ounces)
  • ¼ Cup of Milk
  • 2 teaspoons Gelatine
  • 1 Tablespoon Water
  1. Melt Jersey Caramels in Milk
  2. Dissolve Gelatine in Water
  3. Combine and pour carefully over set filling. Refrigerate

We decorated this with Rolo chocolates and served with some extra whipped cream.

  1. This looks amazing! Unfortunately, here in the US, our foods are measured in English terms; not Metric. I don’t know how to measure butter in grams, for example.
    Is there a conversion recipe for this?
