Warm Couscous and Spinach salad

Quick, easy and a little bit different…

  • 1 Cup Couscous
  • 1 Tablespoon Oil
  • 1 Cup Boiling Water

Pour Couscous into boiling water and oil, stir and set aside for 5 minutes

  • 2 Cups baby Spinach leaves
  • ¼Cup Grated Parmesan (or crumbled Feta)
  • 2 Tablespoons Lemon Juice
  • 2 teaspoons Lemon rind finely grated
  • ½ teaspoon freshly ground Pepper
  • ¼ teaspoon Salt

In serving bowl mix Spinach, Parmesan, Lemon juice & rind, Salt & Pepper

  • 2 Tablespoons Oil
  • 1 teaspoon minced Garlic
  • ¼ Cup sliced Almonds (or Pine nuts)

Fry garlic and nuts in oil until nuts are golden

Gently fluff couscous with a fork

Gently stir Couscous and nuts into the spinach and cover to keep warm
