Passion-fruit and Coconut Self-Saucing Pudding

Those of you who are fans of Chocolate self saucing pudding – or even the self saucing Lemon Delicious…..here is a twist on those favorites that is sure to be a hit.

Individual Passionfruit and Coconut Self-Saucing Pudding
  • 1 Cup  Self-raising Flour
  • ½ cup caster sugar
  • ½ cup desiccated coconut
  • ⅔ cup light coconut milk
  • 1 egg
  • 80g butter, melted, cooled
  1. Grease a large (6 cup) casserole dish – or 6 individual ones
  2. Preheat oven to 180ºC
  3. Mix all ingredients together until smooth
  4. Spoon into dish(es)
  • ½ cup caster sugar
  • 3 teaspoons cornflour
  • ½ cup milk
  • 2 small lemons, juiced (⅓ cup)
  • 3 Passionfruit, pulp & seeds
  1. Mix all ingredients together (OK if it curdles)
  2. Heat in microwave for 60 – 90 seconds
  3. Stir until blended
  4. Pour evenly over pudding(s)
  5. Bake at 180ºC for 55 mins large pudding or 20 – 25 mind for individual puddings
  6. Dust with icing sugar to serve
