Peanut Brownies – not for those with food Allergies!!!

Once again I find myself digging into the old Edmonds Cookery Book to bake an old childhood favorite.  I cant remember why I stopped making these – perhaps because Dianne is not fond of peanuts….or perhaps because somewhere along the way we got ‘fancy’.  As mentioned in the title these are not for people with food allergies as they do contain peanuts, eggs, wheat-flour etc….  but otherwise they are fine.

  • 125 grams Butter
  • 1 cup sugar
  • 1 Egg
  • 1 ½ Cups Flour
  • 1 teaspoon Baking Powder
  • 2 desertspoons Cocoa
  • 1 Cup Peanuts
  • ½ teaspoon salt (I leave this out)
  1. Beat Butter and Sugar until soft and creamy
  2. Add Egg and mix in well
  3. Mix in flour, Cocoa, Peanuts (& Salt)
  4. Roll into balls using a slightly mounded tablespoon as a size guide- makes 15
  5. Place on a tray, leaving room to spread, and flatten slightly
  6. Bake 180° for 15 – 20 mins.

Variations

  • Leave out the peanuts for plain Brownies
  • Replace peanuts with sultanas or chocolate chips
