Fluffy Ducks and Fluffy Ducklings

Planning for Christmas 2014 with Dianne we decided that Egg Nog would be a great inclusion in our Christmas Eve family gathering.  As the weather in Brisbane is most likely to be above 20 degrees in the evening  we decided on a Warm Climate Variation.

A couple of years ago I did a cold Egg Nog for one based on my Nanas Egg flip recipe.  Simple and delicious.  This year I feel the need to ramp it up a bit so we are opting for the Fluffy Duck Cocktail and a Mocktail version. Both quick, easy and a bit classical.

Fluffy Duck

  • 30 mls Advocaat (Egg, Brandy, & Vanilla Liqueur)
  • 30 mls Cream
  • 30 ml Brandy (optional – for those who want ir stronger)
  • Carbonated Soda Water (or lemonade if you like it sweeter)
  • Ice
  1. Select a nice tall glass
  2. Put Advocaat, Cream and Brandy into glass, Stir.
  3. Add 4-5 ice cubes, stir again
  4. Slowly add a small amount of soda and stir to combine.
  5. Gradually add soda to top up the glass. Be careful as this will foam up.
  6. Add a straw and a sprinkle of nutmeg.

Fluffy Duckling

  • 30 mls Cold custard
  • 30 mls Cream
  • Carbonated Soda Water (or lemonade if you like it sweeter)
  • Ice
  1. Select a nice tall glass
  2. Put Custard and Cream into glass, Stir.
  3. Add 4-5 ice cubes, stir again
  4. Slowly add a small amount of soda and stir to combine.
  5. Gradually add soda to top up the glass. Be careful as this will foam up.
  6. Add a straw and a sprinkle of nutmeg or 100s and 1000s.

Variations

  •  Use Cherry Advocaat & Advocaat – no cream and omit nutmeg (Fallen Angel)
  • Rum, Scotch or your favourite spirit instead of Brandy
  • Add Pepermint essence and omit nutmeg
  • Layer Brandy, Advocaat and Cream in a shot glass
  • Replace soda with Orange Juice and garnish with a slice of orange

Warm Egg Nog

  • 8 Eggs, yolks and whites separated 
  • ¾ Cup Sugar
  • 4 Cups milk
  • ½ Cup whipping Cream
  • 1 Tablespoon Vanilla extract
  • 1 Cup Brandy
  • Grated Nutmeg
  1. In a large mixing bowl, beat the egg yolks  until thick and creamy.
  2. Add sugar and beat again until very light, about 3-5 minutes.  Set aside.
  3. In another large bowl, beat the egg whites to stiff peaks. Set aside.
  4. In a saucepan, gently heat the milk, cream, and vanilla. Do not boil.
  5. When small bubbles begin to appear, whisk the hot milk into the yolk mixture.
  6. Add the beaten whites and the brandy and stir until everything is incorporated.
  7. Fill a punch bowl and let everyone serve themselves, or pour egg nog into serving cups and sprinkle a generous amount of nutmeg on top.
  8. Drink hot.

  1. I created a cocktail along this theme (with a Rotorua twist) at Okawa Bay

    Sulphuric Geyser (or something like that)
    In a brandy snifter
    1/3 fill with lemonade or soda
    Gently float on top
    30 mls Advocaat (Egg, Brandy, & Vanilla Liqueur)
    Sprinkle with 100s & 1000s
    Add a straw for stirring temptation and very gently pass to your customer.

    Stand back and get a cloth ready.
