LCHF Christmas Mince Tarts

I absolutley love Christmas Mince Tarts!

This year I have had such health benefits from eating LCHF (Low Carb High Fat) that I really want to get through Christmas without undoing all my good work.   My mission is to now find & adapt recipes that “fit” with the way of eating that is making me feel so much better.

For me, as well as eating low carb I have resisted the temptation to use artifical sweeteners which has meant working carefully with my preferred ingredients to get the flavours and textures as close as possible.

Today I experimented with a few recipes for Christmas Mince Tarts and this is the winner.

LCHF Christmas Mince Tart Filling Ingredients

Filling

  • 15 mls Whisky
  • 1 teaspoon Brandy Essence
  • ½ teaspoon Vanilla Essence
  • 1 Egg
  • 1 Cup Unsweetened dried Cranberries
  • ½ Cup Walnut Pieces
  • ¼ Cup Raisins
  • 1 Tablespoon Butter
  • 1 Tablespoon Coconut Oil
  • 1 Lemon Zest and Juice
  • 1 Orange Zest (+enough juice to make lemon juice up to 2 Tablespoons if needed)
  • 2 teaspoons mixed spices

 

  1. Beat Scotch, Essences and Egg together with a fork – set aside
  2. Heat all remaining ingredients in a pot over a medium to low heat- stir so it doesnt stick .
  3. Once it looks sticky and yummy remove from the heat
  4. Add the egg mix and stir in quickly – you dont want the egg to scramble!!
  5. Set aside to cool while you make the Pastry

Pastry

  • 1 ½ Cups Almond flour
  • ½ Cup Hazlenut flour
  • 1 teaspoons Coconut Flour
  • 1 Tablespoon Coconut Oil
  • 1 Tablespoon Butter – soft
  • 1 Egg
  • 1 Teaspoon Essence (I used 1/2 Vanilla and 1/2 Almond)
  1. Mix the dry together
  2. Add the wet ingredinets and mix until a ball forms – this is easy to do by hand or you can use your processor
  3. Roll out between 2 sheets of baking paper
  4. Cut and line 12 Cup cake pans
  5. Re-roll pastry and cut tops
  6. Fill each case with a heaped teaspoon of the filling and pop a top on
  7. Bake at 180ºC for 15 mins

Notes

  • I used 1 teaspoon of Cinnamon and ¼ teaspoon each of Nutmeg, Cloves, ginger and Chinese Five spice
  • I Glazed the tops of some with extra butter but it made no difference
  • Serve with pouring, thickened or dollop cream…. or Brandy Butter…

…even so….. these will only be a sometimes food.
