Dark Fruit Loaf

Part of a recent bake session to take on a picnic, this dark fruit loaf is quick, easy and delish.  I am privileged to have my mothers trusty cylindrical loaf tin that makes this just a little bit fancier.

  • 1 Cup Sugar
  • 60 grams Butter
  • 2 Cups Dried Fruit
  • 2 Cups Water
  • 2 ½ Cups Flour
  • 2 teaspoons Baking Soda
  • 1 teaspoon Spice – mixed or your choice
  1. Place Sugar, Butter, Fruit and water in a pot.
  2. Boil for 8 minutes, cool
  3. Sift dry ingredients and add to cooled fruit mix.
  4. Bake 1 hour at 180ºC

Serve with butter …
